+:*"Print" the page and save it to a PDF, so you have an always-accessible version of it
+:*Use [[Special:Export]] to export any pages you want, and then import the resulting XML file to a second MediaWiki instance
+:There are private daily backups of the database, an XML export, and settings. I don't currently have something to export something like html copies of every page automatically, but I'm not against having publicly-accessible exports for offline use.

+:There's nothing to cross off on the [[special:DoubleRedirects]] page, it will get updated automatically once it's no longer a double redirect. If you would like to get rid of them it would be a good idea.
